First, prepare your ingredients

Take a pan and pour in 2 tbsp of oil, letting it warm up on medium heat until it gets nice and shiny.
When the oil’s ready, toss in the chopped green chilis—about 250 grams—which will start to sizzle and fill the kitchen with a tasty smell.
Next, add in around 2 inches of freshly grated ginger for a nice, warm kick, and throw in 10 cloves of grated garlic for that strong, yummy flavour that really makes your dish pop.
Fry and mix everything together well, letting all those flavours blend into the oil, creating a tasty base that will make the next steps of your recipe super delicious.

Now, add 1/2 cup water and cover the lid. Cook it till the water dries up.

Now, take the pan off the heat and toss in 2 tbsp of sugar and 1 tbsp of salt. Give it a good mix until the sugar and salt dissolve, making a nice mix of flavours.
Next, pour in 1/2 cup of vinegar, and keep stirring so everything gets blended well. This should turn into a smooth mix as you stir it up. Let it cool down at room temperature, which will help all the flavours come together nicely.
If you want to add a little extra flavour, go ahead and add 1/2 cup of roasted cumin powder. It’s optional, but it really boosts the taste with its warm, earthy flavour.

Now, use a mixer grinder to blend all ingredients thoroughly.

Your green chili sauce is ready. Thick and consistent. How easy was it?
