To make spicy tomato pasta, start by taking a pan, adding 4 tbsp of oil, and heating it over medium heat until it shimmers invitingly.

Next, add about 2 tbsp of grated garlic, letting it sizzle and fill your kitchen with a delicious aroma; cook it for about 2 minutes, stirring gently to avoid burning.

Now, add 1 cup of chopped onion, watching it change color as you cook it for 2 to 3 minutes until it becomes soft and clear, adding a touch of sweetness to the dish.

Add 1/2 cup EACH of red capsicum, green capsicum, and carrot. Cook them until they are soft but still slightly crunchy.

NOTE: Be careful not to overcook, as you want to keep that nice crunch in your vegetables for a better texture and flavor.

Pour in 1 cup of smooth tomato puree and 2 tbsp of tangy tomato sauce, stirring everything together well; let it cook until the gravy turns a rich, deep red color that promises tasty flavors.

Then, sprinkle in 2 tbsp of oregano, 2 tbsp of black pepper, and 2 tbsp of red chili powder, mixing everything well to spread the spices evenly; let it bubble for 2 to 3 minutes so the flavors come together beautifully.

Now, add in a bowl of boiled pasta, like penne or spaghetti, and gently toss it in the sauce to ensure that every piece is covered in that vibrant mix.

Give it a good stir to create a colorful dish that’s as pleasing to the eye as it is to the taste buds.

For an extra layer of flavor, add 1/2 cup of pasta water, stirring it in to help the sauce cling to the pasta just right.

Mix one last time to bring everything together.

To finish, toss in a handful of fresh coriander leaves, which will add both flavor and a pop of color; stir well to blend them in.

Your spicy tomato pasta is now ready to enjoy!

Serve it up on plates, maybe with some cheese on top, and get ready for everyone to dig in and savor this tasty meal.
